Welcome to The Dream Lab, a late-night sensory playground where glowing lab coat clad mixologists serve up high-voltage cocktails with a touch of theatre throughout the Vivid Sydney Festival 2025.
Shaking up new takes on our Epic Sensory Cocktail menu, the Pina Fizz and Palette Pop will be dialled up with fairy floss clouds, oversized lollipops, coloured ice and glow-in-the-dark garnishes.
We're also hosting DJ sets every Friday and Saturday from 8pm till late will keep the energy alive.

The Palette Pop Sweet, sour, salty, bitter and umami, all of the tastes combined. This cocktail blends unexpected elements like mushroom-infused vodka, passionfruit, saline water and tonic. It’s also fully customisable, tailored to each guest’s taste buds.
Pina Fizz From icy cold sips to the soft surprise of a cloud of fairy floss, this flirtatious take on a tropical classic. Pina Fizz is one not to be missed. The combination of rum, pineapple and coconut soda is as refreshing as it is playful.
